Healthier Olive Oil For Frying Food

Health - Scientist in ACS 'Journal if Agricultural and Food Chemistry, reports, olive oil is used for frying, resulting in a more healthful diet than the oil fro the seeds. According to them, these findings could be taken into consideration for the use of olive oil as the oil for frying.

Mohamed Bouaziz and colleagues note, the oil has a physical, chemical and nutritional properties of different, which when heated will degrade the quality of the oil itself.

Them, a few changes to the oil when heated can lead to the formation of new compounds that are potentially toxic. In addition, hot oil can also decrease the nutritional value of foods that are fried.

In an experiment, Mohammed Bouaziz and his team wanted to know whether the oil can maintain its quality under high heat and repeated use. They tried to fry a pieces of potatoes in four different refined oil, the olive oil, made from corn oil, soybean oil and sunflower oil.

Scientists continue to use all four of these oils as much as 10 times. From this experiment they found that olive oil the must stable for frying - at 160 till 190 degrees Celsius, when sunflower oil degraded at a temperature of 180 degree Celsius.

The scientist also concluded, for frying food, olive oil is able to maintain the quality and better nutrition than oil made from grains. Similarly, as reported by the official website of the American Chemical Society
