In an experiment, Mohammed Bouaziz and his team wanted to know whether the oil can maintain its quality under high heat and repeated use. They tried to fry a pieces of potatoes in four different refined oil, the olive oil, made from corn oil, soybean oil and sunflower oil.
Scientists continue to use all four of these oils as much as 10 times. From this experiment they found that olive oil the must stable for frying - at 160 till 190 degrees Celsius, when sunflower oil degraded at a temperature of 180 degree Celsius.
